2 loaves Sunbeam Bread
2 egg yolks
2 8-ounce packages cream cheese
1 1/2 cups sugar, divided
2 sticks melted butter or margarine
Cinnamon to taste

  1. Preheat oven to 425°.

  2. Cut crusts off bread slices. Roll bread slices very thin.

  3. Put slices between damp paper towels for 1 hour.

  4. In a large bowl, beat egg yolks well.

  5. In a separate bowl, cream together cream cheese and 1/2 cup sugar.

  6. Add the cream cheese mixture to the egg yolks and beat well.

  7. Spread bread slices with cheese mixture and roll up each slice like a jelly roll.

  8. In a shallow pan, mix cinnamon with remaining sugar.

  9. Dip bread rolls in melted butter then in sugar and cinnamon mixture. Cut bread rolls in half.

  10. Place on a lightly greased cookie sheet and bake for 8 to 10 minutes. Remove to cooling racks.

Freezing Tip
After rolling in sugar and cinnamon, put the bread rolls on a cookie sheet and place in the freezer. When the rolls are hard, pack in a freezer bag or container and return to the freezer. When ready to bake, cut each roll in half, place on a lightly greased cookie sheet and follow the baking instructions above.
