Servings: Makes 4 sandwiches
Nonstick cooking spray
3 green onions, sliced
3 eggs
¼ teaspoon salt
Ground black pepper
4 strips crisp-cooked bacon, crumbled
¼ cup shredded or grated Parmesan cheese
4 Nature's Own 100% Whole Wheat Sandwich Rounds, toasted
Spinach leaves
4 tomato slices

  1. Spray large skillet with cooking spray. Heat skillet over medium heat.

  2. Add green onions. Cook and stir 2 minutes.

  3. Meanwhile, beat eggs, salt and pepper to taste with fork until well blended. Pour into skillet.

  4. Cook, stirring occasionally, until egg mixture is partially cooked. Stir in bacon and cheese.

  5. Continue to cook until egg mixture is set, but not dry. Remove from heat.

  6. Line bottom of rolls with spinach leaves; top with tomato and egg mixture.

  7. Close sandwiches. Serve immediately.

For best results, cook egg mixture on medium heat until just set but still moist. Do not allow egg mixture to become dry.
